These Riesling grapes were intentionally ripened beyond their typical harvest date in order to develop very high sugar content. The grapes were harvested at 25.1 brix, pressed into juice and fermented in stainless-steel tanks at 55°F to preserve the wine's naturally luscious fruit flavors.
